Whoopie Pies

(makes 24 cookies)

½ cup Shortening

1 cup Sugar

2 Whole Eggs

1tbs Chocolate Melting Wafers

5 tbs Cocoa Powder

2 cups All Purpose Flour

1 tsp Baking Powder

1 tsp Baking Soda

½ cup Milk

Pinch of Salt

Filling:

2 cups Cream Cheese

½ cup Brown Sugar

½ cup Sugar

½ cup Sour Cream

Directions:

In a stainless steel bowl, mix shortening and sugar until it reaches a paste like consistency. Slowly, add one egg at a time. Once incorporated, add dry ingredients and milk. Continue to mix until all ingredients are absorbed. Using a one ounce ice cream scoop, drop dough onto greased cookie sheet. Preheat oven at 350 degrees and bake for 13 minutes. For the filling, mix cream cheese and sugars into paste like consistency. Slowly, add sour cream until you find the right thickness. (Be mindful, the filling needs to hold its shape in between each cookie.) Once cookies are cooled down, place a sufficient amount of filling on top and add another cookie base in sandwich form. Eat & enjoy!
