RECIPE ALERT: Chef Will’s Signature Stuffed Chicken

On Thursday we had the pleasure of hosting guests from the CATO Institute. And, like any good host, we prepared a delicious home cooked meal for them. For their visit, our catering chef, William Crafton prepared his signature Stuffed Chicken Breast. This recipe is both cheesy and wholesome, transforming an everyday chicken breast with a unique but simple stuffing.

Ingredients: 

4 Skinless Chicken Breasts
2 Cups Shredded Mozzarella
1 cup minced sundried tomato
½ bunch parsley finely chopped
2 teaspoons salt
1 teaspoon black pepper
1 pinch saffron
1/4c extra virgin olive oil
Salt and pepper

Directions:

Take one cup of extra virgin olive oil and add saffron. Let it sit for at least 30 minutes. Fillet the chicken breast and rub it with the extra virgin olive oil and saffron mix. Combine the sundried tomatoes, parsley and mozzarella until it forms into a ball. Place one tablespoon of the dough mixture in the center of the chicken breast and overlap the ends of the breast. Place the chicken on a sheet pan and brush the outside with the saffron and olive oil mixture. Bake at 350 degrees for 25 minutes. Immediately sprinkle with salt and pepper to taste.
