The Doe Fund’s Food Services Department is always looking for new ways to grow and ensure that our trainees gain invaluable experiences in culinary arts. To this end, we decided to apply for Smorgasburg’s outdoor season this year! If chosen, we would be showcasing our delicious food to local Brooklynites as well as allowing our trainees to be a part of a new and truly exciting endeavor.
In order to apply for Smorgasburg, we needed to create a special tasting menu. We chose to highlight a fried chicken sandwich with pepper jack cheese and smoky mayonnaise, a grilled hanger steak sandwich with southwestern coleslaw and balsamic glaze, mini baked macaroni and cheese bites, watermelon arugula salad, and black bean cake patty as the vegetarian option.
Always a crowd pleaser, we wanted to share our black bean cake recipe with our followers. We hope you enjoy it as much as we do and keep your fingers crossed as we await a response from Smorgasburg!
Black Bean Cake
1 lb. cooked black beans
2 whole eggs
2 tbsp. roasted garlic, pureed
4 tbsp. lemon juice
2 tbsp. hot sauce
1 tbsp. harissa sauce
1 c. soaked white beans
1 c. roasted peppers, cut in strips
1. Preheat the oven to 325 degrees.
2. In a stainless steel bowl, combine all ingredients, except for the peppers and onions, and mix thoroughly. Separate the mixture and roll each portion into a ball.
3. Grill the patties on both sides for approximately 3 minutes. To finish, bake in the oven for 7 minutes at 325 degrees.
4. Place on hamburger bun and top with roasted peppers and onions. Enjoy!
