23 Sep RECIPE ALERT: Hubbard Squash Soup
As the temperatures drop here in New York, we want to share our Hubbard Squash Soup recipe! Our main ingredient, squash, is one of our staple autumn vegetables that is used widely throughout our facilities. Not only is this dish healthy, it’s a cost effective way to help keep our men in blue warm during those brisk autumn mornings. Enjoy!
Hubbard Squash Soup (4 servings)
1 Tablespoon virgin olive oil
1 Onion, finely diced
2 Garlic cloves, finely diced
1 Quart vegetable broth or water
4 Cups hubbard squash, puree
1 Teaspoon Salt
½ Teaspoon Black Pepper
1/8 Teaspoon Cinnamon
1/8 Teaspoon Mace
1 Cup Heavy Cream
½ Cup Chopped Scallions
Directions: Heat the olive oil and sauté the onions and garlic until golden. Add the broth and simmer for 15 minutes. Next, add the squash, salt, pepper, cinnamon, and mace to the broth and simmer for another 15 minutes. Add the heavy cream and continue to simmer for another 5-6 minutes until it’s thoroughly heated. Serve garnished with chopped scallion.
