RECIPE ALERT: Homemade Hot Sauce and Wings from Street Fair Events

We’ve recently introduced a new specialty sauce to our street fair after listening to several of our customers wanting some spicy options to put on their wings/sliders. Kronna Williams, our senior coordinator at our Porter facility, went straight to work and created an absolutely delicious hot sauce! Feel free to check out our wing and hot sauce recipe to see if you can recreate this new dish that has become a huge hit at our street fair!

Chicken Wings

Roasted Chicken Wings

4lbs Chicken wings

1/4cup Blended oil

2tbl Montreal steak seasoning

Salt and Pepper to taste

Directions: Blend all ingredients in a stainless steel bowl. Make sure all of the chicken is evenly coated. Place seasoned wings on sheet pan and let it bake for a minimum of 30 minutes at 350 degrees. Remove pan from oven and toss wings in the hot sauce mixture. Grill wings for 3-4 minutes until wings are crisp and has caramelized.

Homemade Hot Sauce

4oz Ancho chilies

4oz Jalapeño

1lb 10 cans crush tomatoes

1lb 10 cans Ketchup

1lb Brown sugar

8oz Apple cider vinegar

8oz Whole garlic

8oz Scallions

2 bunch cilantro

1 gal water

 

Directions: Sauté Garlic and Scallion until translucent then add Ancho chilies and Jalapeno peppers. Continue cooking until peppers are soft.

Add Vinegar and Brown sugar then reduce it until it becomes thick (similar to a glaze.) Add Tomato product and water then simmer for an hour. Strain through a fine sieve. Let cool until room temperature. Pour into a squeeze bottle and drizzle on slider or wings.

Most importantly, enjoy! (And have some water close by just in case!)
