We recently catered our yearly barbecue for Steve Madden where we served an array of food for their staff and friends. Everyone fully enjoyed all the food and was delighted by yet another great service from our Doe Fund catering team. Here is our Chicken Pesto Wrap recipe that was raved about throughout this event. Enjoy!
Chicken Pesto Wrap
1 pound boneless skinless chicken breast or thighs
2 tablespoon white miso
8 cloves of garlic
1/2 cups parmesan cheese
1 pound fresh basil
1 cup olive oil (enough to make a paste then add salt and pepper to taste)
Directions: Season (salt and pepper) the chicken breast and bake/grill until fully cooked. Add all ingredients (miso/garlic/parmesan cheese/basil) to a food processor while adding olive oil to the mixture to create your pesto. Mix 2 cups of pesto mixture with 1 cup of mayo then add a splash of lemon juice. Spread the pesto sauce evenly onto your wrap. Place (sliced/diced) cooked and cooled chicken onto your wrap and serve with fresh arugula or spinach.
