RECIPE ALERT: Street Fair Sliders

Street Fair Recipes!!!!

Ever wanted to add a little variety to your typical grilled hamburgers during barbecue season? Check out one of our slider recipes that we will be using at The Third Avenue Street Fair starting on Sunday, June 1, 2014 between 19th and 20th street from 10-6pm. I guarantee you will find every excuse to make your way to the grill and enjoy these savory bites.

Chicken Sliders
10lbs Chicken Thighs (Boneless)
1tbl Chicken Seasoning
1tbl Turmeric
1tsp Cumin
3 Whole Garlic Cloves
½ Onion
Salt and Pepper to taste

Directions: Mince the garlic and place in stainless steel bowl with the rest of the ingredients. Mix until all ingredients are evenly dispersed. Divide into 3oz pieces. Shape into round cylinder. Grill on each side at high heat for 3 minutes.

Asian Glaze Sauce
1cup Melba Sauce
1cup Chicken broth
1cup Soy Sauce
1cup Balsamic Vinegar
½cup Worcestershire Sauce
3tbl Ginger (Minced)
1tbl Sesame Oil
3cups Brown Sugar
1cup Honey
1tbl Chili Oil
Salt and Pepper to taste
1cup Scallions (Sliced thin)
1cup Garlic (Minced)
1tsp 5 Spice
3tbl Miso Sauce

Directions: Sauté scallion, garlic and ginger until clear. Add 5 spice and cook in hot pan to release the flavors. Add honey, brown sugar soy sauce, balsamic vinegar, Worcestershire Sauce and let simmer until it becomes a glaze in about 10 minutes. Add Melba Sauce as well as chicken broth and continue to cook until the liquid can coat the back of a spoon in about 20 minutes. Finish sauce with sesame seed oil and miso sauce.

Tasty Buns
5cups All Purpose Flour
2 (.25oz) Pancake Dry Yeast
1cup Milk
¾ cup Water
½ cup Vegetable Oil
¼ cup White Sugar
1tspn Sugar

Directions: Stir together 2 cups flour and the yeast. In a separate bowl, heat milk, water, oil, sugar and salt to lukewarm in a microwave. Add all at once to the flour mixture, and beat until smooth, for about 3 minutes. Mix in enough flour to make soft dough, 2 to 3 cups. Mix well. Dust a flat surface with flour, turn dough out onto floured surface, and let rest under bowl for about 10 minutes. Shape dough into 12 slightly flat balls, and place on greased baking sheet. Egg wash. Let rise until doubled in size (approximately 40 min.) Bake in a preheated oven at 325 degrees F for 20 minutes.
